Prepare the Prime Rib
Preheat your oven to 375°F (190°C). Season the prime rib with salt and pepper. Place it in a roasting pan and roast for about 1 hour, or until it reaches your desired level of doneness (medium-rare recommended). Let it rest for 15 minutes before slicing.

Sauté the Peppers
In a skillet, heat a tablespoon of olive oil over medium heat. Add the hot and sweet peppers, and sauté until they are tender, about 5-7 minutes. Season with salt and pepper to taste.

Make the Garlic Chive Aioli
In a bowl, combine 1 cup of mayonnaise, 2 minced garlic cloves, and 1/4 cup chopped fresh chives. Mix well and season with salt and pepper to taste.

Assemble the Sandwiches
Slice the ciabatta rolls in half. Layer the sliced prime rib, sautéed peppers, and provolone cheese on the bottom half of each roll. Spread a generous amount of garlic chive aioli on the top half, then close the sandwiches.

Toast the Sandwiches
Optional: Place the assembled sandwiches in a panini press or on a grill pan. Press down gently and toast until the cheese is melted and the bread is crispy, about 3-5 minutes.

Slice the sandwiches in half and serve immediately, with any extra aioli on the side.
