Method

Preparing the Marinara Sauce

    Sauté the Garlic

    In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.

    Simmer the Sauce

    Add the crushed tomatoes, dried oregano, salt, and black pepper to the saucepan. Stir to combine, then reduce the heat to low and let simmer for about 20 minutes, stirring occasionally.

    Finish the Sauce

    Stir in the fresh basil just before removing from heat. Set the sauce aside.

Preparing the Veal Chops

    Season the Chops

    Season both sides of the veal chops with salt and black pepper.

    Prepare the Breading Station

    Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.

    Bread the Chops

    Dredge each veal chop in flour, shaking off the excess. Dip into the beaten eggs, then coat with breadcrumbs, pressing gently to adhere.

    Fry the Chops

    In a large skillet, heat 1 cup of olive oil over medium-high heat. Once hot, add the breaded veal chops and cook for about 4-5 minutes on each side, or until golden brown. Remove and drain on paper towels.

Assembling the Dish

    Layer the Ingredients

    Preheat your oven to 375°F (190°C). In a baking dish, spread a layer of marinara sauce on the bottom. Place the fried veal chops on top, then cover each chop with more marinara sauce.

    Add Cheese

    Sprinkle mozzarella and parmesan cheese evenly over the top of the veal chops.

    Bake

    Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.

Serving

    Serve the Dish

    Remove from the oven and let cool for a few minutes. Serve hot, garnished with additional fresh basil if desired.
