Rigatoni Bolognese Recipe

Cooking Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the rigatoni and cook according to the package instructions until al dente. Reserve 1 cup of pasta cooking water before draining.

Making Bolognese Sauce

    Prepare the Vegetables

    Finely chop the onion, carrot, and celery. Mince the garlic cloves.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes until softened.

    Add Garlic and Meats

    Stir in the minced garlic, ground beef, and ground pork. Cook until the meats are browned, breaking them up with a spoon.

    Deglaze with Wine

    Pour in the red wine and let it simmer for about 5 minutes until slightly reduced.

    Add Tomatoes and Seasoning

    Add the canned tomatoes, salt, black pepper, and a pinch of nutmeg. Stir well and let it simmer on low heat for about 30-40 minutes.

    Incorporate Milk and Cream

    Stir in the milk and heavy cream, allowing the sauce to cook for an additional 10 minutes.

    Combine Pasta and Sauce

    Add the drained rigatoni to the sauce, tossing to combine. If the sauce is too thick, add reserved pasta water as needed.

    Finish with Cheese

    Grate Parmigiano-Reggiano cheese over the pasta and mix well before serving.
