Pasta Dough

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into it. Using a fork, gradually incorporate the flour into the eggs until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes, until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Prepare the Filling

    In a mixing bowl, combine ricotta cheese, grated Parmesan cheese, nutmeg, salt, and black pepper. Mix until well combined. Set aside.

Assemble Ravioli

    Roll the Dough

    After resting, divide the dough into four pieces. Roll out each piece into thin sheets using a pasta machine or rolling pin.

    Fill the Ravioli

    Place a teaspoon of filling about 1 inch apart on one sheet of dough. Moisten the edges with water, then fold the dough over to cover the filling. Press to seal and cut out individual ravioli using a cutter.

Sauce

    Make the Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Pour in the marinara sauce and bring to a simmer. Stir in the heavy cream, and season with salt and black pepper to taste.

Cook and Serve

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Add ravioli and cook for 3-4 minutes, or until they float to the surface. Remove with a slotted spoon.

    Serve

    Plate the ravioli and spoon the creamy marinara sauce over them. Garnish with fresh basil and additional grated Parmesan cheese if desired.
