    Cut the pork belly into 1-inch cubes and place them in a large bowl.

    Sprinkle kosher salt, black pepper, and paprika over the pork belly cubes. Toss well to ensure all pieces are evenly coated.

    Preheat the Smoker

    Preheat your smoker to 225°F (107°C). Soak the wood chips in water for at least 30 minutes before use.

    Smoke the Pork Belly

    Place the seasoned pork belly cubes on the smoker grates and add the soaked wood chips to the smoker box. Smoke for 2 to 3 hours until they reach an internal temperature of 190°F (88°C).

    In a small saucepan, combine brown sugar, honey, apple cider vinegar, and barbecue sauce. Bring to a simmer over low heat, stirring until the sugar has dissolved.
