Directions
- 1
Prepare the Pork Belly
Cut the pork belly into 1-inch cubes and place them in a large bowl.
- 2
Season the Pork Belly
Sprinkle kosher salt, black pepper, and paprika over the pork belly cubes. Toss well to ensure all pieces are evenly coated.
- 3
Preheat the Smoker
Preheat your smoker to 225°F (107°C). Soak the wood chips in water for at least 30 minutes before use.
- 4
Smoke the Pork Belly
Place the seasoned pork belly cubes on the smoker grates and add the soaked wood chips to the smoker box. Smoke for 2 to 3 hours until they reach an internal temperature of 190°F (88°C).
- 5
Make the Glaze
In a small saucepan, combine brown sugar, honey, apple cider vinegar, and barbecue sauce. Bring to a simmer over low heat, stirring until the sugar has dissolved.
- 6
Coat the Pork Belly
Once smoked, remove the pork belly from the smoker and place it in a foil pan. Pour the glaze over the pork belly cubes, tossing to coat well.
- 7
Finish Smoking
Cover the foil pan with aluminum foil and return it to the smoker for an additional 1 to 2 hours until tender and caramelized.
- 8
Serve
Remove the burnt ends from the smoker, let them cool slightly, then serve warm. Enjoy your sweet and smoky pork belly burnt ends!
