Grilling Shrimp
Preheat a grill or grill pan over medium-high heat. Once hot, add the marinated shrimp and cook for 2-3 minutes on each side, or until they are pink and opaque. Remove from heat and set aside.

Warming Tortillas
In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side, or until they are pliable and slightly toasted.

Mixing Ingredients
In a bowl, combine the diced tomatoes, chopped red onion, cilantro, lime juice, and salt. Stir well to combine and set aside to let the flavors meld for a few minutes.

Making the Sauce
In a small bowl, mix together the mayonnaise, chipotle peppers (chopped), lime juice, and garlic powder until smooth and well combined.
Assembling Tacos

Building the Tacos
Take a warm tortilla and add a portion of grilled shrimp. Top with a generous amount of pico de gallo and drizzle with chipotle sauce. Repeat with the remaining tortillas.
