Prepare the Calamari
Rinse the calamari under cold water and pat dry with paper towels. Set aside.

Make the Breading Mixture
In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

Prepare the Egg Wash
In another bowl, whisk the eggs and buttermilk together until well combined.

Dredge the Calamari
Dip each calamari ring into the egg wash, allowing excess to drip off, then coat in the flour mixture. Set aside on a baking sheet.

Fry the Calamari
Carefully add calamari rings in batches to the hot oil. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
For the Marinara Sauce

Sauté Garlic
Add minced garlic and sauté for about 1 minute, until fragrant but not browned.

Add Tomatoes and Seasoning
Stir in crushed tomatoes, oregano, salt, and black pepper. Bring to a simmer.

Simmer Sauce
Reduce heat and let the sauce simmer for about 15-20 minutes, stirring occasionally.

Finish the Sauce
Stir in chopped fresh basil just before serving.
