Chop the dark chocolate into small pieces and place them in a heatproof bowl. Set the bowl over a saucepan of simmering water (double boiler method) and stir until completely melted. Remove from heat and allow to cool slightly.

In a separate bowl, pour in the heavy cream and add the vanilla extract. Using a hand mixer or whisk, whip the cream until soft peaks form. Be careful not to over-whip it; set aside.

Beat Egg Whites
In another clean bowl, add the egg whites and a pinch of salt. Using a hand mixer, beat on medium speed until foamy. Gradually add the granulated sugar while continuing to beat until stiff peaks form.

Spoon the mousse into serving dishes or glasses. Refrigerate for at least 2 hours or until set.
