    Melt the Chocolate

    Chop the dark chocolate into small pieces and place them in a heatproof bowl. Set the bowl over a saucepan of simmering water (double boiler method) and stir until completely melted. Remove from heat and allow to cool slightly.

    Whip the Cream

    In a separate bowl, pour in the heavy cream and add the vanilla extract. Using a hand mixer or whisk, whip the cream until soft peaks form. Be careful not to over-whip it; set aside.

    Beat Egg Whites

    In another clean bowl, add the egg whites and a pinch of salt. Using a hand mixer, beat on medium speed until foamy. Gradually add the granulated sugar while continuing to beat until stiff peaks form.

    Combine Mixtures

    Once the chocolate has cooled, gently fold in a third of the whipped cream into the melted chocolate until just combined. Then, fold in half of the beaten egg whites, followed by the remaining whipped cream and egg whites, being careful not to deflate the mixture.

    Chill the Mousse

    Spoon the mousse into serving dishes or glasses. Refrigerate for at least 2 hours or until set.

    Once chilled, serve the chocolate mousse as is or topped with additional whipped cream or chocolate shavings, if desired.
