    Prepare the Ingredients

    Thinly slice the yellowtail into 8 equal pieces. Slice the jalapeño into thin rounds, and remove the seeds for less heat if desired. Dice the cucumber into small matchstick-sized pieces. Rinse and chop the cilantro roughly.

    Assemble the Dish

    On a serving platter, arrange the yellowtail slices neatly. Top each piece with a slice of jalapeño and a small amount of diced cucumber. Sprinkle tobiko over the top and finish with a garnish of cilantro.

    Serve with Sauce

    Drizzle ponzu sauce over the assembled yellowtail pieces or serve it on the side for dipping.
