Prepare the Sushi Rice
Rinse sushi rice under cold water until the water runs clear. Cook according to package instructions. Once cooked, let it cool slightly and season with a mixture of rice vinegar, sugar, and salt.
Prepare the Fillings
Blanch the asparagus in boiling water for 2 minutes, then cool in ice water. Slice the jalapeño thinly. Prepare the spicy tuna mix by combining diced raw tuna with sriracha and a pinch of salt.
Assemble the Rolls
Lay a nori sheet on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. Place a line of spicy tuna, asparagus, jalapeño slices, and shrimp tempura at the bottom. Roll tightly using the sushi mat and seal the edge with a little water.
Slice the Rolls
Use a sharp knife to slice the roll into 10 equal pieces. Wipe the knife with a damp cloth between cuts for cleaner slices.
Top the Rolls
Arrange the sushi pieces on a plate. Top each piece with a slice of salmon and shrimp. Drizzle with eel sauce, soy sauce, and a bit of sriracha.

Carefully drizzle a small amount of high-proof alcohol over the top of the sushi. Using a long lighter, ignite the alcohol to create a flame. Serve immediately after flaming, garnished with green onions and sesame seeds.
