    Prepare Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions. Once cooked, let it cool slightly.

    Season Sushi Rice

    In a small bowl, mix together the rice vinegar, sugar, and salt. Gently fold this mixture into the warm rice until evenly coated. Allow the rice to cool to room temperature.

    Slice Yellowtail

    Using a sharp knife, slice the yellowtail into thin pieces for sashimi (about 1/4 inch thick) and into rectangular pieces for nigiri (about 2 inches long).

    Form Nigiri

    Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and mold it into an oval shape. Top with a slice of yellowtail. Optionally, add a small amount of wasabi between the rice and fish.

    Serve

    Arrange the nigiri and sashimi on a plate. Serve with soy sauce and additional wasabi on the side.
