Preparation and Cooking

    Prepare the Vegetables

    Wash and cut the assorted seasonal vegetables into bite-sized pieces. Pat them dry with a paper towel to remove excess moisture.

    Make the Tempura Batter

    In a mixing bowl, combine the tempura batter mix with ice-cold water. Stir gently until just combined. The batter should be lumpy, do not overmix.

    Heat the Oil

    In a deep pan or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature for optimal frying.

    Fry the Vegetables

    Dip the prepared vegetables into the tempura batter, allowing excess batter to drip off. Carefully place them into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 2-3 minutes.

    Drain and Serve

    Remove the tempura from the oil and place on a paper towel-lined plate to drain excess oil. Serve immediately with sweet onion-soy dipping sauce.
