Prepare the Ahi Tuna
Dice the ahi tuna into small cubes and season with salt and pepper to taste. Set aside.

Prepare the Wonton Chips
If using store-bought wonton chips, skip this step. If making homemade, preheat the oven to 350°F (175°C). Cut wonton wrappers into triangles, place on a baking sheet, and bake for about 5-7 minutes or until golden and crispy.

Assemble the Nachos
On a large serving plate, arrange a layer of wonton chips. Sprinkle half of the mexi cheese over the chips, followed by the diced ahi tuna and pico de gallo. Add the remaining mexi cheese on top.

Melt the Cheese
Place the assembled nachos in a preheated oven at 350°F (175°C) for about 5 minutes, or until the cheese is melted and bubbly.

Add Sauces
Remove from oven and drizzle with wasabi mayo and spicy mango habañero glaze.

Serve immediately while hot, garnished with additional pico de gallo if desired.
