Preparation Instructions

  1. 1

    Prepare the Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it sit for 10 minutes off the heat.

  2. 2

    Season the Rice

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice using a wooden spatula. Allow the rice to cool to room temperature.

  3. 3

    Prepare the Tuna

Slice the sashimi-grade tuna into thin pieces for sashimi or shape into small oblong mounds for nigiri.

  4. 4

    Assemble the Dish

For nigiri, mold a small amount of sushi rice into an oval shape and place a slice of tuna on top. For sashimi, arrange the tuna slices on a plate. Serve with soy sauce, wasabi, and pickled ginger on the side.
