    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the rice cooker's instructions. Once cooked, let it sit for 10 minutes.

    In a small saucepan, heat the rice vinegar, sugar, and salt over low heat until dissolved. Once the rice has rested, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.

    Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and mold it into an oval shape. Place a slice of smoked salmon on top of the rice.

    Slice the smoked salmon into thin pieces for sashimi, ensuring even thickness for a nice presentation.
