Prepare the Filling
In a bowl, mix the cream cheese, finely chopped jalapeño, and wasabi paste until well combined.

Prepare the Fish
Slice the red snapper fillets into thin strips, about 1 inch wide.

Assemble the Shooters
Lay a rice paper wrapper on a clean surface. Spread a thin layer of the cream cheese mixture along the center of the wrapper. Place a strip of red snapper on top of the cream cheese.

Roll the Wrapper
Carefully fold the sides of the rice paper over the filling and roll it up tightly, ensuring the filling is sealed inside. Repeat with the remaining wrappers and filling.

Garnish and Serve
Cut each roll into bite-sized pieces and drizzle with soy sauce. Top with tobiko and sprinkle with sesame seeds before serving.
