    Prepare Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook according to package instructions. Once cooked, allow it to cool slightly.

    Season Sushi Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooled sushi rice.

    Slice the Salmon

    Using a sharp knife, slice the fresh salmon fillet into thin pieces for sashimi (about 1/4 inch thick) and for nigiri (about 1 inch by 2 inches).

    Form Nigiri

    Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 15-20 grams) and shape it into an oval. Place a slice of salmon on top. If using nori, you can wrap a small strip around the nigiri.

    Serve

    Arrange the nigiri and sashimi on a plate. Serve with wasabi and soy sauce on the side.
