    Prepare the sushi rice

    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, let it cool slightly.

    Season the rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Fold this mixture into the cooled sushi rice gently and let it cool to room temperature.

    Prepare the octopus

    Boil water in a large pot. Once boiling, place the octopus in the water and cook for about 45 minutes or until tender. Remove and let cool. Slice into thin pieces for sashimi or shape into nigiri.

    Form nigiri

    Wet your hands with water to prevent sticking. Take a small amount of seasoned sushi rice and mold it into an oval shape. Place a slice of octopus on top, pressing gently to adhere.

    Serve sashimi

    For sashimi, simply arrange the sliced octopus on a plate and serve with wasabi and soy sauce on the side.

    Garnish and serve

    If desired, garnish with nori sheets cut into strips, and serve the nigiri and sashimi with wasabi and soy sauce.
