Prepare the Tempura Batter
In a bowl, combine the tempura batter mix and ice-cold water. Mix gently until just combined; do not overmix.

Prepare the Shrimp and Asparagus
Peel and devein the shrimp. Trim the asparagus to about 3-4 inches in length. Season both shrimp and asparagus with salt and pepper.

Heat the Oil
In a deep pot, heat vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Shrimp Tempura
Dip each shrimp into the tempura batter, allowing excess to drip off. Carefully place them in the hot oil, frying in batches. Cook until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Fry the Asparagus
Dip asparagus into the tempura batter and fry in the same manner as the shrimp until golden and crispy, about 2-3 minutes. Drain on paper towels.

Prepare the Cheesy Crab
In a separate bowl, mix crab meat with a little salt, pepper, and a small amount of the volcano sauce to taste.

Assemble Mount Fuji
On a serving plate, place the fried shrimp and asparagus. Top with the cheesy crab mixture and drizzle with additional volcano sauce. Garnish with tobiko.
