Method
Preparing the Pork Chops

Season the Pork Chops
Season both sides of the pork chops with salt and black pepper.

Cook the Pork Chops
In a large skillet, heat olive oil over medium-high heat. Add the pork chops and cook for 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
Making the Mongolian Sauce

Combine Sauce Ingredients
In a saucepan, combine soy sauce, brown sugar, garlic, ginger, sesame oil, water, and cornstarch. Stir well.

Cook the Sauce
Bring sauce to a simmer over medium heat, stirring constantly until it thickens. Remove from heat.
Preparing Wasabi Smashed Potatoes

Cooking the Asparagus

Prepare Asparagus
Preheat oven to 400°F (200°C). Toss asparagus with olive oil, salt, and black pepper.

Roast Asparagus
Spread asparagus on a baking sheet and roast in the oven for 12-15 minutes until tender.
Serving

Serve the pork chops drizzled with Mongolian sauce, alongside wasabi smashed potatoes and roasted asparagus.
