    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions. Once cooked, transfer to a bowl and let it cool slightly.

    Season the Sushi Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm sushi rice and gently fold it in. Allow the rice to cool to room temperature.

    Prepare the Eel

    If using fresh eel, grill it until it is cooked through. Brush with a mixture of soy sauce and mirin for added flavor. For sashimi, slice the eel into thin pieces.

    Assemble Nigiri

    Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 1-2 tablespoons) and shape it into an oval. Place a piece of grilled eel on top of the rice and gently press down.

    Serve

    Arrange the nigiri on a plate and serve with wasabi and pickled ginger on the side. For sashimi, arrange the sliced eel neatly on a plate and serve with soy sauce for dipping.
