    Prepare the Crust

    Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, melted butter, sugar, and salt. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let it cool.

    Make the Cheesecake Filling

    In a large mixing bowl, beat the cream cheese and sugar together until smooth. Add the heavy cream, vanilla extract, and eggs one at a time, mixing until just combined after each addition. Do not overmix.

    Bake the Cheesecake

    Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 45-50 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.

    Cool and Refrigerate

    Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight.

    Brulee the Top

    Before serving, sprinkle the sugar for the brulee topping evenly over the cheesecake. Using a kitchen torch, caramelize the sugar until it forms a golden crust. If you don’t have a torch, you can place the cheesecake under the broiler for a few minutes, watching closely to prevent burning.

    Serve

    Slice the cheesecake and serve with fresh seasonal fruit, drizzled caramel and chocolate sauce, and a dollop of whipped cream.
