    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, transfer to a large bowl.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm rice and gently fold to combine. Let the rice cool to room temperature.

    Prepare the Fillings

    While the rice is cooling, slice the avocado and cucumber into long thin strips. If using imitation crab, shred it into bite-sized pieces.

    Assemble the Rolls

    Lay a nori sheet shiny side down on a bamboo sushi mat. Wet your hands and spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge. Place crab, avocado, and cucumber in a line across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, lift the edge closest to you and begin to roll away from you, pressing gently but firmly to shape the roll. Continue rolling until you reach the edge of the nori. Use a little water to seal the edge.

    Slice and Serve

    Using a sharp knife, slice the roll into 8 pieces. Serve with soy sauce, wasabi, and pickled ginger on the side.
