Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Marinate in Buttermilk
Place the calamari rings in a bowl and cover them with buttermilk. Let them marinate in the refrigerator for at least 30 minutes.

Prepare the Coating
In a separate bowl, combine the flour, cornstarch, paprika, garlic powder, salt, and black pepper.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Coat the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge them in the flour mixture until fully coated.

Fry the Calamari
Carefully drop the coated calamari into the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Make Spicy Lemon Aioli
In a bowl, combine mayonnaise, lemon juice, sriracha sauce, garlic, and lemon zest. Mix well and set aside.

Garnish with Gremolata
In a small bowl, mix together chopped parsley, lemon zest, and minced garlic to create gremolata. Sprinkle over the fried calamari.

Serve
Serve the calamari hot with spicy lemon aioli and cocktail sauce on the side.
