Prepare the Vegetables
Wash and chop all the vegetables into bite-sized pieces. Set aside.

Make the Sauce
In a small bowl, whisk together the soy sauce, sesame oil, minced garlic, minced ginger, cornstarch, water, and red pepper flakes until well combined. Set aside.
Cooking

Heat the Pan
In a large skillet or wok, heat a tablespoon of oil over medium-high heat until shimmering.

Add the Sauce
Pour the prepared sauce over the vegetables in the pan. Stir well to coat all the vegetables evenly. Cook for an additional 2-3 minutes, or until the sauce thickens and the vegetables are cooked through.

Season to Taste
Add black pepper to taste. Adjust the seasoning if necessary.
Serving

Garnish and Serve
Remove the stir fry from heat. Optionally, sprinkle sesame seeds and chopped green onions over the top before serving. Serve hot over rice or noodles.
