Season the Steak
Remove the ribeye steaks from the refrigerator and let them come to room temperature for about 30 minutes. Pat them dry with paper towels. Generously season both sides of the steaks with salt and black pepper.

Prepare the Garlic and Rosemary
Peel the garlic cloves and lightly crush them with the flat side of a knife. Set aside the crushed garlic and fresh rosemary sprigs for later use.

Heat the Pan
In a large skillet or frying pan, heat the olive oil over medium-high heat until it's shimmering but not smoking.

Baste the Steaks
Using a spoon, baste the steaks with the hot oil and juices in the pan for an additional 4-5 minutes for medium-rare, adjusting the cooking time to your preferred doneness.

Rest the Steaks
Once cooked to your liking, remove the steaks from the pan and let them rest on a cutting board for about 5-10 minutes to allow the juices to redistribute.
