    Prepare the Croissants

    Slice the croissants in half and spread a little butter on the inside. Heat a griddle or skillet over medium heat and place the croissants cut side down to toast until golden brown, about 2-3 minutes. Remove from heat and set aside.

    Make the Soft Scrambled Eggs

    In a bowl, whisk together the eggs, salt, and pepper. Heat a non-stick skillet over low heat and add a tablespoon of butter. Once melted, pour in the eggs. Gently stir with a spatula, pushing the eggs from the edges toward the center. Continue until the eggs are softly scrambled and slightly runny, about 3-4 minutes.

    Add Cheese and Chives

    Remove the skillet from heat and fold in the shredded cheddar cheese and chopped chives. The residual heat will melt the cheese.

    Assemble the Sandwich

    Spread honey mustard on the bottom half of each toasted croissant. Layer with sliced ham and then generously spoon the soft scrambled eggs on top. Place the other half of the croissant on top to complete the sandwich.
