Roasted Lamb Chops

Prepare the Marinade

In a bowl, mix olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the lamb chops and let them marinate for at least 30 minutes.

Roast the Lamb Chops

Preheat the oven to 400°F (200°C). Place the marinated lamb chops on a baking sheet and roast for 15-20 minutes or until they reach the desired doneness.

Warm Couscous Salad

Cook the Couscous

In a pot, bring water to a boil. Add couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.

Combine Salad Ingredients

In a large bowl, mix the cooked couscous, cherry tomatoes, cucumber, feta cheese, parsley, lemon juice, salt, and pepper. Toss gently and set aside.

Prepare the Pea Puree

In a pot, melt butter over medium heat. Add the peas and cook for 5-7 minutes until tender. Blend until smooth, then season with salt and black pepper.

Caramelized Shallot Bordelaise Sauce

Make the Bordelaise Sauce

In a pan, melt butter and add diced shallots. Sauté until caramelized. Pour in the red wine and stock, and let it simmer until reduced by half. Season with salt and black pepper.
