Steak Preparation

    Season the Steak

    Generously season both sides of the sirloin strip steaks with salt and black pepper.

    Cook the Steak

    Heat olive oil in a skillet over medium-high heat. Once hot, add the steaks and cook for about 4-5 minutes on each side for medium-rare, or to your desired doneness.

    Rest the Steak

    Remove the steaks from the skillet and let them rest for 5 minutes before slicing.

Grilled Broccolini

    Prepare the Broccolini

    Preheat your grill or grill pan over medium heat. Toss the broccolini with olive oil, minced garlic, salt, and pepper.

    Grill the Broccolini

    Grill the broccolini for about 5-7 minutes, turning occasionally until tender and slightly charred.

Brown Butter Mashed Potatoes

    Boil the Potatoes

    Peel and cube the Idaho potatoes. Boil them in salted water until fork-tender, about 15-20 minutes.

    Make Brown Butter

    In a separate pan, melt the butter over medium heat until it turns golden brown and gives off a nutty aroma.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add the brown butter and milk. Mash until smooth, adding salt and pepper to taste.

Red Wine-Mushroom Demi-Glace

    Sauté Shallots and Mushrooms

    In a saucepan, melt butter over medium heat. Add chopped shallots and mushrooms, cooking until softened.

    Add Wine and Broth

    Pour in the red wine and beef broth. Bring to a simmer and let it reduce by half, about 10-15 minutes.

    Season the Sauce

    Add thyme, salt, and pepper to taste. Strain if desired and serve over the steak.
