    Prepare the Chicken

    Preheat the oven to 375°F (190°C). Rinse the chicken under cold water and pat dry with paper towels. Rub the chicken all over with olive oil, salt, and black pepper. Pour the Huli Huli sauce over the chicken, ensuring it is well coated.

    Roast the Chicken

    Place the chicken in a roasting pan and roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 165°F (74°C). Baste the chicken with the pan juices every 30 minutes.

    Prepare the Grits

    While the chicken is roasting, bring 4 cups of water to a boil in a saucepan. Stir in the grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally until thickened. Stir in the cheddar cheese until melted and set aside.

    Roast the Carrots

    Toss the baby carrots with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven (alongside the chicken) for the last 30 minutes of cooking, until tender and caramelized.

    Serve the Meal

    Once the chicken is done, let it rest for 10 minutes before carving. Serve the carved chicken over the cheddar grits, alongside the roasted baby carrots, and drizzle with Huli Huli pan sauce. Enjoy with a family-sized house salad.
