Beef Short Ribs

Prepare the Beef
Season the boneless beef short ribs with salt and black pepper. In a large Dutch oven, heat a bit of oil over medium-high heat and sear the short ribs on all sides until browned. Remove and set aside.

Brown Butter Mashed Potatoes

Make Brown Butter
In a small saucepan, melt the butter over medium heat until it turns golden brown. Be careful not to burn it.

Bordelaise Sauce

Prepare the Sauce
In a small saucepan, melt the butter over medium heat and sauté minced shallots until translucent. Add red wine and beef stock, bringing it to a simmer. Reduce until thickened, season with salt and pepper.
Crispy Carrot Ribbons

Bake the Carrots
Toss thinly sliced carrots with olive oil and salt. Spread them on a baking sheet and bake at 400°F (200°C) for about 15-20 minutes until crispy.
House Salad

Assemble the Salad
In a large bowl, combine mixed greens, cherry tomatoes, and cucumber. Toss with your choice of dressing just before serving.
