    Slice the Potatoes

    Wash and scrub the russet potatoes thoroughly. Using a mandoline or sharp knife, slice the potatoes thinly (about 1/8 inch thick).

    Fry the Chips

    Heat the vegetable oil in a deep pot over medium-high heat until it reaches 350°F (175°C). Carefully add the potato slices in batches, frying until they are golden brown and crispy, about 3-4 minutes per batch.

    Drain and Season

    Using a slotted spoon, remove the chips from the oil and transfer them to a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with seasonal sea salt to taste.

    Serve the freshly made chips alongside the chilled onion dip for dipping.
