Soak the Slices
Place the potato slices in a bowl of cold water and let them soak for at least 30 minutes. This will help remove excess starch and make them crispier.

Make the Seasoning
In a small bowl, mix together the chili powder, lime juice, salt, garlic powder, onion powder, and black pepper to create a seasoning blend.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C). You can test this by dropping a potato slice in; it should sizzle immediately.

Fry the Chips
Fry the potato slices in batches, being careful not to overcrowd the pot. Fry them for about 3-4 minutes or until they are golden brown and crispy.

Drain and Season
Remove the chips with a slotted spoon and drain them on paper towels. While they are still hot, sprinkle the chili-lime seasoning over the chips and toss to coat evenly.

Serve the chips warm with Fork sauce on the side for dipping.
