    Pickle the Red Onions

    In a bowl, combine the sliced red onions with white vinegar, sugar, and salt. Let it sit for at least 30 minutes to pickle.

    Prepare the Remoulade

    In a small bowl, mix Dijon mustard, mayonnaise, and lemon juice. Set aside.

    Grill the Salmon

    Season the king salmon fillets with olive oil, salt, and black pepper. Grill over medium heat for about 4-5 minutes on each side or until cooked to your liking.

    Assemble the Sammy

    Toast the brioche buns. Spread the Dijon remoulade on the bottom half of each bun, layer with arugula, add the grilled salmon, top with pickled red onions, and cover with the top half of the bun.

    Serve immediately with seasonal sea salt natural cut chips or substitute with tomato-basil soup.
