Prepare the Prime Rib
Preheat your oven to 450°F (232°C). In a small bowl, combine the chopped rosemary, thyme, minced garlic, olive oil, salt, and black pepper to create a herb paste. Rub the herb mixture all over the prime rib.
Roast the Prime Rib
Place the seasoned prime rib on a roasting rack in a roasting pan. Roast in the preheated oven for 20 minutes to develop a crust. Reduce the temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness (135°F for medium-rare).
Serve
Slice the prime rib and serve it with house au jus and a side of creamy horseradish. Choose between brown butter Idaho mashed potatoes or rosemary-parmesan Idaho fries.
