Prepare the Batter
In a large bowl, whisk together the eggs, milk, vanilla extract, brown sugar, and a pinch of salt until well combined.

Prepare the Puffed Cereal
In a shallow dish, place the puffed cereal. You may crush it slightly for better adherence.

Cut and Dredge the Bread
Cut each slice of brioche into thick sticks. Dip each stick in the egg mixture, ensuring it's fully coated, then roll it in the puffed cereal until well coated.

Cook the Toast Sticks
In a large skillet, melt the butter over medium heat. Once hot, add the coated brioche sticks and cook until golden brown on all sides, about 2-3 minutes per side.

Prepare the Bourbon-Maple Syrup
In a small saucepan, gently heat the maple syrup and bourbon together until warm.

Prepare the Coffee-Sugar Dust
In a small bowl, mix together the coffee grounds and powdered sugar.

Plate the French toast sticks with a side of fresh fruit. Drizzle with the bourbon-maple syrup and serve with crème anglaise and coffee-sugar dust.
