    Cook the Bacon

    In a skillet over medium heat, cook the applewood smoked maple-spiced bacon until crispy. Remove from the skillet and let drain on paper towels. Once cooled, chop into bite-sized pieces.

    Prepare the Omelet

    In a bowl, whisk together the local eggs with a pinch of salt and pepper. Heat a non-stick skillet over medium heat and add a little oil or butter. Pour the eggs into the skillet and allow them to cook undisturbed for about 2-3 minutes.

    Add Fillings

    Once the edges of the omelet start to set, add the chopped bacon, diced avocado, shredded mozzarella, and dollops of pesto and tomato on one half of the omelet. Carefully fold the other half over the filling.

    Finish Cooking

    Continue cooking for another 2-3 minutes or until the cheese has melted and the eggs are fully cooked.

    Prepare Herbed Potatoes

    While the omelet is cooking, in another pan, sauté herbed potatoes until golden brown and heated through.

    Toast the Sourdough

    Toast the sourdough bread slices until golden and serve with local jam on the side.

    Plate the omelet with herbed potatoes and the toasted sourdough bread with jam. Enjoy!
