Tortilla Preparation

    Mix the dough

    In a large bowl, combine the corn flour and salt. Gradually add water while mixing with your hands until a soft dough forms. If the dough feels too dry, add a little more water.

    Shape the tortillas

    Divide the dough into 10 equal pieces. Roll each piece into a ball, then flatten it into a disc about 6 inches in diameter using a tortilla press or rolling pin.

    Cook the tortillas

    Heat a non-stick skillet or griddle over medium-high heat. Cook each tortilla for about 1-2 minutes on each side, or until lightly browned and cooked through. Keep warm in a clean kitchen towel.

    Sauté the filling ingredients

    In a skillet, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent, about 3-4 minutes. Stir in the diced jalapeños and cook for another 2 minutes.

    Reduce the heat to low and add the shredded cheese to the skillet. Stir until the cheese is melted and combined with the onion and jalapeño mixture.
