Prepare the Lobster Filling

    Cook the Lobster

    If using live lobster, bring a large pot of salted water to a boil. Add the lobster and cook for 8-10 minutes until the shell turns bright red. Remove from water and let cool. If using pre-cooked lobster, skip this step.

    Chop the Lobster

    Once cooled, remove the lobster meat from the shell and chop it into bite-sized pieces.

    Combine Ingredients

    In a large mixing bowl, combine the chopped lobster meat, finely chopped celery, chopped confit tomatoes, and house aioli. Mix gently until well combined. Season with salt and pepper to taste.

Assemble the Lobster Roll

    Prepare the Buns

    Lightly toast the New England-style hot dog buns on a grill or in a skillet until golden brown, about 1-2 minutes.

    Spoon the lobster filling generously into each toasted bun, being careful not to overfill.

    Serve the lobster rolls immediately with a side of chips for crunch.
