Preparing the Rice

    Rinse the Sushi Rice

    In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed.

    Season the Rice

    In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, remove it from heat and let it sit covered for 10 minutes. Then, transfer the rice to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Preparing the Toppings

    Prepare the Oysters

    Carefully shuck the Kumamoto oysters and place them on a plate. Keep them chilled until ready to serve.

    Finely chop the chives and set aside.

    In a small bowl, combine soy sauce, lemon juice, and wasabi to create a dipping sauce.
