Duck Confit Preparation

    Prepare the Duck

    In a large pot, season the duck legs with salt, black pepper, thyme, and smashed garlic. Cover the duck legs with duck fat and heat over low to medium heat until the fat is melted. Simmer gently for 2 to 3 hours until the duck is tender and falling off the bone.

    Cool and Store

    Remove the duck legs from the pot and let them cool. Once cooled, store in the refrigerator in the duck fat until ready to use.

    Cook the Onions

    Slice the yellow onions thinly. In a pan, heat olive oil over medium heat and add the onions. Cook, stirring often, until they become soft and caramelized, about 20 minutes.

    Add Sugar and Vinegar

    Once the onions are caramelized, add sugar and balsamic vinegar. Cook for another 10 minutes, stirring occasionally, until the mixture thickens. Remove from heat and let it cool.

Grilled Cheese Assembly

    Assemble the Sandwich

    Spread some butter on one side of each slice of pan de mie. On the unbuttered side of 4 slices, layer gruyere cheese, shredded duck confit, a generous spoonful of onion jam, and a handful of arugula.

    Grill the Sandwich

    Top with the remaining slices of bread, buttered side up. Heat a skillet over medium heat and place the sandwiches in the skillet. Grill until golden brown and the cheese is melted, about 3-4 minutes per side.
