    Grease Ramekins

    Preheat your oven to 425°F (220°C). Grease four ramekins with 2 tablespoons of unsalted butter, making sure to coat the entire interior. Dust the greased ramekins with cocoa powder, tapping out any excess.

Making the Batter

    Melt Butter and Chocolate

    In a medium saucepan, melt the 1 cup of unsalted butter and 8 oz of bittersweet chocolate over low heat, stirring frequently until smooth. Remove from heat and let cool slightly.

    Mix Sugar and Eggs

    In a separate bowl, whisk together 1 cup of granulated sugar, 2 large eggs, and 2 large egg yolks until well combined and slightly frothy.

    Combine Mixtures

    Slowly add the melted chocolate and butter mixture to the egg mixture, whisking continuously to prevent the eggs from cooking.

    Add Vanilla and Dry Ingredients

    Stir in 2 teaspoons of vanilla extract, 1 tablespoon of all-purpose flour, and a pinch of salt. Mix until just combined, but do not overmix.

Baking

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

    Bake

    Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

    Cool Slightly

    Remove from the oven and let the cakes cool in the ramekins for about 1 minute.

    Serve

    Carefully invert each ramekin onto a plate. Let stand for 10 seconds before lifting the ramekin off. Serve warm, optionally topped with ice cream or whipped cream.
