Method

Preparation of Oysters

  1. 1

    Clean the Oysters

Rinse the fresh oysters under cold running water to remove any dirt and debris. Scrub the shells with a brush if necessary.

  2. 2

    Open the Oysters

Using an oyster knife, carefully insert the knife into the hinge of the oyster and twist to pry it open. Be cautious to avoid injury. Discard the top shell and keep the oyster in the bottom shell.

Prepare the Mignonette Sauce

  1. 3

    Chop the Shallots

Finely chop the shallots and place them in a mixing bowl.

  2. 4

    Combine Ingredients

Add the red wine vinegar and black peppercorns to the chopped shallots. Mix well and let sit for at least 15 minutes to allow the flavors to meld.

  3. 5

    Add Parsley (Optional)

If using, finely chop the fresh parsley and mix it into the mignonette sauce.

Serve the Oysters

  1. 6

    Prepare the Serving Dish

Spread a layer of rock salt on a serving platter to hold the oysters in place.

  2. 7

    Arrange the Oysters

Place the opened oysters on top of the rock salt on the platter.

  3. 8

    Add Mignonette Sauce

Spoon a small amount of the prepared mignonette sauce over each oyster.

  4. 9

    Garnish and Serve

Add lemon wedges around the platter and serve with hot sauce on the side, if desired.
