Marinate the Pork
In a bowl, mix bourbon, brown sugar, paprika, garlic powder, onion powder, salt, and black pepper to create a marinade. Rub the mixture all over the pork shoulder, cover, and refrigerate for at least 4 hours or overnight.

Slow Roast the Pork
Preheat your oven to 300°F (150°C). Place the marinated pork in a roasting pan and cover tightly with aluminum foil. Roast in the oven for about 6 hours or until the pork is tender and easily shreds with a fork.

Make the Coleslaw
In a bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, and sugar. Toss well and refrigerate until ready to serve.

Assemble the Sandwich
Toast the brioche buns lightly. On the bottom half of each bun, add a generous portion of the pulled pork, top with lettuce and coleslaw, and finish with the top half of the bun.
