Prepare the Chicken
Cut the chicken breasts into bite-sized pieces and set aside.

Make the Battering Station
In a bowl, combine the all-purpose flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper. In another bowl, whisk together the eggs and buttermilk.

Coat the Chicken
Dip each piece of chicken into the egg mixture, letting the excess drip off, then dredge it in the seasoned flour mixture until fully coated.

Heat the Oil
In a deep skillet or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken Bites
Carefully add the coated chicken pieces to the hot oil (do not overcrowd). Fry in batches for about 4-6 minutes or until golden brown and cooked through. Use a slotted spoon to remove the chicken and drain on paper towels.
