Prepare the Marinade

In a bowl, mix together olive oil, minced garlic, chopped rosemary, salt, black pepper, and lemon juice.

Marinate the Pork Loin

Place the pork loin in a large resealable bag or a dish and pour the marinade over it. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 1 hour, preferably overnight.

Preheat the Oven

Preheat your oven to 200°C (400°F).

Prepare the Cheese Topping

In a small bowl, combine the grated Parmesan cheese with a little extra black pepper.

Cook the Pork Loin

Remove the pork loin from the marinade and place it in a roasting pan. Sprinkle the Parmesan cheese over the top of the pork loin.

Roast

Roast in the preheated oven for about 25-30 minutes, or until the internal temperature reaches 70°C (160°F).

Rest and Serve

Remove the pork loin from the oven and let it rest for 10 minutes before slicing. Serve warm.
