Prepare the Polenta
In a large pot, bring 4 cups of water to a boil. Add 1 tsp of salt. Gradually whisk in the polenta to prevent lumps. Reduce heat to low and cook, stirring frequently, until thickened (about 20-25 minutes).
Cool and Slice
Once the polenta is thick, pour it into a greased baking dish and spread evenly. Let it cool at room temperature for at least 30 minutes or until set. Once set, slice the polenta into desired shapes (squares or triangles).
Fry the Polenta
In a large skillet, heat the olive oil over medium-high heat. Add the sliced polenta in batches, frying until golden brown and crispy on both sides (about 3-4 minutes per side).
Serve
Remove the fried polenta from the skillet and drain on paper towels. Season with black pepper and sprinkle with grated Parmesan cheese. Garnish with fresh herbs if desired. Serve hot.
