    Preparation

    Preheat the grill to medium-high heat. Rinse the branzino under cold water and pat dry with paper towels.

    Seasoning the Fish

    Drizzle the inside and outside of the branzino with olive oil, then season generously with salt and black pepper. Stuff the cavity with lemon slices, fresh herbs, and smashed garlic.

    Grilling the Fish

    Place the branzino on the grill and cook for about 6-8 minutes on each side, or until the flesh is opaque and flakes easily with a fork.

    Serving

    Once cooked, remove the branzino from the grill and let it rest for a few minutes. Carve the fish tableside and serve with additional lemon wedges and herbs.
