Cheesecake Preparation

Prepare the crust

Preheat the oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.

Make the cheesecake filling

In a large bowl, beat the cream cheese until smooth. Gradually add granulated sugar and mix well. Add sour cream, eggs one at a time, and vanilla extract, mixing until fully incorporated.

Bake

Pour the cheesecake filling over the crust in the springform pan. Bake in the preheated oven for about 50-60 minutes, or until the center is set and slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

Chill

Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight.
