Preheat the Oven
Preheat your oven to 400°F (200°C).

Roast the Butternut Squash
In a large bowl, toss the cubed butternut squash with 2 tablespoons of olive oil, maple syrup, salt, and black pepper. Spread the squash on a baking sheet in a single layer and roast for 25-30 minutes, or until tender and lightly caramelized.

Roast the Apples
In the same bowl, toss the sliced apples with remaining olive oil and a sprinkle of salt. Add to the baking sheet in the last 10 minutes of roasting the squash, allowing them to soften and caramelize slightly.

Prepare the Salad
In a large serving bowl, combine the roasted butternut squash and apples with spinach or arugula, feta cheese, and walnuts.

Drizzle with balsamic vinegar and gently toss to combine all ingredients evenly.
